Homemade French Fries

In anticipation of our upcoming potato harvest, I wanted to try to make homemade french fries and freeze them. Now I have made homemade french fries before but never froze them . So , off to Google university I went. lol

I cut the potatoes into french fries with our commercial french fry cutter. Why do we have a commercial french fry cutter you ask? Because I sent my husband to the restaurant supply store. Enough said.

I heated some corn oil in a large pot. I then dropped the fries in batched. Just cook until they are tender but not brown.

Take out and drain on a paper towel. Lay flat on a baking sheet or cutting board and flash freeze. Flash freeze means to lay flat with no covering until frozen. Then place in to Ziplocs or some other freezer container. You flash freeze so that they don't stick together in one big blob. Then you take out what you need.

To cook:
  1. Take out of freezer and place on baking sheet.
  2. Place in 350 degree oven until brown.
  3. Salt to taste.

Now you have cheap french fries with no yucky stuff added. Did I mention cheap? It doesn't get any better than that!

I will have to remember this when our potatoes come in at our CSA this year (usually September). I had a whole box of potatoes grow four inch long eyes before I could use them last year - that WILL NOT happen this year because I'm going to make French Fries to freeze!
