Now, when we have this on Meatless Mondays, I leave out the bacon on the top. The soup tastes just as good without the bacon. But the bacon really sends it over the top in my opinion. My husband and daughter add cheese to theirs as well . I eat mine without cheese so that Logan doesn't feel left out. Also, I usually add the bacon to each individual bowl then add the remaining bacon to it when I put the leftovers away. There won't be a lot of leftovers, trust me.
Potato Soup
2 cartons broth (chicken, beef, veggie, whatever)
8- 10 potatoes, peeled and cubed
several tablespoons minced garlic or 2 -3 garlic cloves
1 cup milk or milk substitute ( any sub will work here)
Add potatoes, broth, and garlic to crock pot. Set on low and let cook for 8 - 10 hours. When potatoes are tender, put a small amount of broth into a cup. Slowly add milk and mix. When thoroughly mixed together, add mixture into crockpot.. Put crock pot on high for an hour. Using immersion blender, blend just until soup starts to thicken. Be sure to leave some potatoes whole. Ladle into bowls and add bacon if desired. Yummy!
